Fresh with crisp green apple, complex biscuity and yeasty flavours

The Bruno Paillard story starts in January 1981, when Bruno, armed only with unstinting self-belief and the cash from selling his old Jaguar, decided to create his own Champagne.

Only the first pressing of the grapes used. Then blended with a proportion of red wine giving colour and older reserve wines to make the final blend. Second fermentation occurs in bottle and a very low dosage

Notes:     A delicate Champagne with subtle Pinot Noir redcurrant and cherry fruit, balanced by some creamy citrus notes. All of which is carried by a refined mousse.
